This lot from Bona Zuria in Sidama reflects the clarity and complexity that define Ethiopia’s high-altitude coffees. Sourced from smallholder producers in Olonso Qeka, the coffee is grown between 2000 and 2226 masl, where cooler temperatures and fertile soils slow cherry development and concentrate flavor.
Composed of local landrace varieties, this coffee carries the genetic diversity that makes Ethiopian profiles so distinctive. After harvest, cherries are processed using a traditional washed method, then dried slowly on shaded raised beds for 10 to 15 days. This careful drying preserves aromatics while maintaining structure and balance in the cup.
In the cup, the profile opens with dried mango sweetness. Notes of golden raisin follow, bringing both brightness and depth. A orange blossom lift runs throughout, supported by a silky mouthfeel that ties the profile together. The acidity is vibrant but controlled, giving the coffee a sense of movement without sharpness.
Despite its complexity, the cup remains composed and layered, but easy to follow, with each note unfolding clearly and intentionally.
