Also called "pork butt", "Boston butt", or sometimes (incorrectly) just "pork shoulder", the pork shoulder butt is well know for its marbling and rich flavor. It's a versatile cut that can be braised, slow-roasted, stewed, or even, when cut thin, grilled or seared as a steak (cooked mid-well!)
We recommend at least 2 pounds if you plan to roast it. Let us know how you'd like it cut (or not cut!)
