Grüner Veltliner from Schönberg in the Kamptal, by Mathilde & Christoph. The grapes come from two different vineyards, about 30 years old, planted on slate. The maceration lasts only 24 hours, and after fermentation, the wine is aged for one year on the lees in a 1000-liter Austrian oak barrel. Bottled unfiltered with minimal sulfur. A pure Grüner style with a denser texture and a long finish. Served chilled at 10°C, it pairs wonderfully with Austrian classics and herb-infused fresh cheese.
